Ma La Chicken
This tasty chicken dish is served cold. You can add or reduce spices to taste. Enjoy!
Ingredients: (serves 2 or 3): |
1/2 of 1 thawed cornish game hen, cut lengthwise
4 cups of water
4 quarter-sized slices of ginger
3/4 tsp salt
1/2 tsp sugar
1 tbsp soy sauce
1 tsp vinegar
3 cloves of garlic, diced
1 tbsp finely diced scallion greens
2 pinches of Sichuan red peppercorns
1/2 tsp sesame oil
1 tsp hot chili oil

Directions:
(1) Put the water in a pot and add chicken. Turn on high heat and bring to boil.
(2) After water reaches a boil, turn down heat to medium.
(3) After chicken has cooked, take it out of the pot and put it on a plate.
(4) Wait for chicken to cool. Cut into inch-square pieces (see picture above.)
(5) Put all the spices in a small bowl and mix together. Pour the spices over the chicken.
(6) You're finished!
